1 lb Ground Turkey (Jennie-O)†
1 lb Turkey Sausage (Honeysuckle White) †
3 Large Eggs
1 jar Roasted Red Peppers in Olive Oil
1 jar Sun Dried Tomatoes in Olive Oil
1 approximately 1-2 cups of raw *sliced Squash and Zucchini *
1 small Bag of Spinach (approximately two big handfuls)
2 cups of your favorite shredded Cheese
Coconut Oil to grease the pan(s)

Makes 12 servings

– Preheat Oven to 375˚.
– In a Food Processor, combine all raw veggies/w a small amount of the Olive Oil from the Sundried Tomatoes or Roasted Red Peppers.
– Combine Ground Turkey and Turkey Sausage, Veggie mix, eggs, and cheese (Mix well with hands).
– Grease a 13×7 Loaf Pan (or 2-3 smaller loaf pans or muffin tin) well with Coconut Oil.
-Place mixture in greased pans
– Cook for 1 hr (pouring off some of the oil/grease half way through, if in loaf pan).
– When done let stand for 5-10 min then serve.

†I have found that the Jennie-O Ground Turkey and the Honeysuckle White Turkey Sausage have the lower calories, fat, and sodium than other brands.  Check the packages and compare calories, fat, and sodium before purchasing to ensure that you are getting the best product. †
